Embracing an independent spirit armed with more than 35 years experience in creating, owning and operating restaurants in the Louisville Metro area, Bim Deitrich brings a rich and innovative touch as Creative Director for restaurant and bar concept development for Ardent Hotel Advisors.
Beginning in 1977, with the groundbreaking Bristol Bar & Grille in the Cherokee Triangle, to the Art Deco Savoy on West Main in 1978, followed by the suburban Langtry's Roadhouse in 1979, he fashioned an American cuisine revolution for Louisville restaurant patrons.
In1982 he revitalized Myra's, the ultimate Highlands bistro, with an innovative global menu and a dynamic, jazzy bar scene.
His renovation of the 1927 Crescent Theater in 1988 into Deitrich's in the Crescent began the renaissance of historic Frankfort Avenue. A European brasserie with a sidewalk cafe leading into the mahogany and tile bar room was an instant phenom. The cascading walk down the open levels of the former movie theater (now dining room) to the very first display kitchen in town made Deitrich's a truly original restaurant experience never before seen in the region. Personal service, with a professional staff assembled over the years, combined with the dedicated execution of an evolving menu, remains a cornerstone in the Louisville lexicon of dining.
Following a research trip to Florence, Allo Speido was launched in 1994. It was a unique combination of pizzeria, rosticceria and wine bar. Thin crust Roman pizzas from the wood fired oven, Tuscan herbed meats off the spit combined with rustic antipasti and pasta presented Louisville with the natural simplicity of Italian cooking.
In 2001, again on Frankfort Avenue, Bim transformed a dilapidated 1940's Texaco station into the retro RED Lounge. The combination of classic cocktails, small plate bar menu and soul stirring DJs proved to be a combustible success.
Primo, located in the trend setting East Market Loft District, marked a pleasant return to excellence in downtown dining in 2005. As anticipated, Primo raised the bar for Italian cuisine for Louisvillians in a true urban setting. Authentic recipes matched with regional wines from Sicily to Piedmont garnered 4-star accolades throughout the region.
In the summer of 2008, Bim embarked on his next phase of creative and innovative concept development for Ardent Hotels. Beginning with Molly's, a casual, beach side bar and grill along with Milazzo, a full service Italian dining house were redeveloped at the Sheraton Atlantic Beach, NC.
In 2009, Castle Ranch Steakhouse, reflecting the cowboy west featuring sustainably grown, natural beef from RR Ranch opened in Colorado, Idaho, Utah and New Mexico. In the fall of 2009, Rayo Grill opened in San Diego with a south of the border concept featuring fresh, organic ingredients and artisinal Tequila bar.
Bim always looks to the future with a respect for the past in his pursuit of dining excellence.
